It’s nearly time for the World Travel Catering Expo (WTCE) our big trade fair event of the year. For the culinary excellence team it’s a really exciting time. With food at the core of our business, and an open kitchen at the center of the stand, all eyes are on us to prepare something delicious.
This year we’ll be focusing on passenger needs, so we’ve designed the menu around three global styles that appeal to different passenger types – natural ‘n’ local, classic and inspirational. The dishes we’ll be preparing will show how these styles can be interpreted in food and presentation, and how the styles overlap and interact with each other.
As a little preview, I’ll let you in on the fact that we’ll have a tasty prawn dish. We’ve taken a classic dish, applied the natural ‘n’ local style with best quality prawns from the North Sea and special local sea buckthorn dressing, and added an inspirational twist.
We’ll be featuring many different preparation techniques, with frozen food and sous vide as well as fresh dishes, representing the range available at LSG Sky Chefs. Our head chefs from all over Europe have been involved in the planning and will be preparing the food at the stand. Come by and let us give you a little taste of our world.
